  • Origin & History

    Vindaloo originated in Goa, India when Portuguese influence combined with the local cuisine to create what was known as carne de vinha d'alhos (meat in garlic and wine). More intensely hot than many other curries, the Portuguese soon began to substitute the wine for vinegar, giving the dish a tangy, spicy edge which has evolved over the years. Free from caste and religious restrictions, Christian chefs in Goa made the dish using chicken, pork, and beef.
