Roasted Chicken Rub
Cooking time: 80 minutes
2 chicken legs
4 tbsp olive oil
Zest 1 lime
2 tbsp chicken rub
2 garlic cloves - diced
1/2 tsp salt
- Mixed the chicken rub, salt, garlic, lemon zest and olive oil . Rub over the chicken legs, then chill for one hour . Heat oven to 180C
- Place the chicken legs in a small roasting tin and bake covered with aluminum foil for about 45 minutes, then uncover and bake for another 15-20 min until tender and gold.
- Remove form the pan and serve with roasted vegetables
